Valpolicella is made up of the hills and valleys north of the city of Verona, in the Veneto region.
It extends from the Adige river valley to the territories of the Soave production area. Valpolicella is an area with a controlled designation of origin (DOC - DOCG).
After fermentation this wine ages for at least one year in wooden barrels. With the Ripasso technique, the Valpolicella Superiore wine undergoes a second fermentation with the skins of the grapes used for Amarone.
